Its an app that lets you store all application shortcuts in an organized menu. It's extremely useful for those apps that are from the same family, like the Creative Suite CS3, Final Cut Studio (or any Apple app) Link to comment Share on other sites More sharing options...

That's another way of doing it yes, however there are several downsides to that. One is that you have to have ALL your apps aliases in 1 folder which makes it longer to search, or you have to create another folder in side that to have "families" of apps (i.e CS3, Final Cut Studio, etc.)..which again take even longer to search. Or you have to create seperate folders in your dock for different families of apps..which again takes longer. With Overflow, all you have to do is hit F1, and the screen fades in, then use option+up arrow to cycle through the families.
