Have you tried to boot with a OpenCore's USB installation key instead of your M2 SSD. EDIT: Can you try to remove SSD entries in Device proprieties section in the config.plist. Try to boot again. Or using a Catalina install thumb drive can you boot to the first install page using opencore? this will at least point towards where the trouble is.
